Hummus, Feta, Cucumber and Mint Sandwiches






What You'll Need


  • ½ cup crumbled feta cheese
  • ½ small red onion, sliced
  • 6 sprigs mint, torn
  • 4 slices multigrain bread
  • ½ cup hummus
  • 1 small cucumber, thinly sliced

How to Make It


  1. Spread 2 slices of bread with hummus.
  2. Layer on the cucumber, feta, onions, and mint.
  3. Top with remaining bread.
  4. Wrap sandwiches tightly with plastic film or wax paper if you are packing them, or serve immediately.
