Lemon Zucchini Bars






What You'll Need


  • two teaspoons baking soda
  • one teaspoon salt
  • one cup chopped walnuts
  • 1/3 cup confectioners' sugar for decoration
  • 1 1/4 cups white sugar
  • one cup vegetable oil
  • three eggs
  • tow teaspoons lemon zest
  • 1/4 cup fresh lemon juice
  • 1 3/4 cups grated zucchini
  • tow cups all-purpose flour

How to Make It


  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Grease a 9x13-inch baking pan.
  3. In a large bowl, combine sugar, oil, eggs, lemon rind, and lemon juice; mix well.
  4. Stir in shredded zucchini.
  5. In another bowl, combine flour, baking powder, baking soda, and salt.
  6. Gradually add this mixture to the zucchini mixture.
  7. Stir until thoroughly combined; mix in the walnuts.
  8. Pour batter into prepared pan and bake until a tester inserted in the center comes out clean, 35 to 45 minutes.
  9. Cool.
  10. Sprinkle cake with sifted confectioners' sugar and cut into bars.
  11. Sprinkle top with sifted confectioners' sugar and cut into bars.
