Vicki's Hush Puppies

What You'll Need

• one large onion, diced
• one cup self-rising flour
• one cup self-rising cornmeal
• one quart oil for frying
• tow eggs, beaten
• 1/2 cup white sugar

How to Make It

1. In a medium bowl, mix together eggs, sugar, and onion.
2. Blend in flour and cornmeal.
3. Heat 2 inches of oil to 365 degrees F (185 degrees C).
4. Drop batter by rounded teaspoonfuls in hot oil, and fry until golden brown.
5. Cook in small batches to maintain oil temperature.
6. Drain briefly on paper towels. Serve hot.
