• 100g of fresh cream
• 150g sugar
• plum 500g
• Syrup 16 ° B (see preparation)

• Mix the milk with the cream and sugar in a saucepan.
• Cook over low heat (85 ° C), stirring constantly until the cream coats the spatula.
• Wash and pit the plums. Cut into pieces.
• Poach the pieces of plums in syrup at 16 ° B. drain and mix.
• Pour the cream on the pulp plum. Strain.
• Allow to cool, stirring occasionally.
• Pour the cream in an ice cream maker.
• Mold. Smooth.
