Ingredients:
4 potatoes -
1/2 onion or 1 small onion -
Mozzarella 200g -
1 tablespoon parsley -
1 tablespoon rosemary -
2 egg yolks -
250g melted butter -
A handful of breadcrumbs -
Ingredients for breading
2 eggs -
Crumbs 200g -
100g flour -
Frying oil -
Instructions:



Preparation croquettes
Cook the potatoes, peel them and cut them into mashed with a fork.
Finely chop the onion and add the puree.
Add the butter, some breadcrumbs, egg yolks, herbs and salt and pepper.
Mix all to obtain a homogeneous mixture. The puree should not be liquid.
With your hands, shape of small balls of mashed potatoes.
Cut your mozzarella into small squares.
Take mashed balls, make a hole in the middle with your finger and place the mozzarella square. Close the ball and shape it again. Do the same for all the kibble.
Preparation for breading
Prepare a bowl with 2 eggs need to fight, a bowl with flour and a bowl with the breadcrumbs.
Dip the croquettes in flour, then in egg and then in bread crumbs. The croquettes must be well coated.
Heat the oil and gently fry the croquettes drop. (The oil should be hot before diving croquettes).
Fry the croquettes and when they are golden brown on all sides, remove them and place them on paper towels to remove excess oil.
The kibble is eaten hot.

Tip: You can add some spices like cumin or turmeric to give a little more oriental flavor to your kibble.
