White Bean Salad Recipe

Ingredients:
1 can of white beans
2 potatoes
2 carrots
1 tomato
1 chopped onion
chopped parsley
Vinaigrette sauce
2c.à.s vinegar
3c.à.s oil
1 pinch of pepper
1 pinch of salt
Preparation
Wash and peel the potatoes, cut into cubes.
Wash and peel the carrots, core and cut into cubes.
In boiling salted water, cook the diced potatoes and carrots for 20 minutes. Drain and let cool.
Prepare the vinaigrette sauce. In a large bowl put the salt, pepper. Add the vinegar and oil.
Whisk vigorously until it becomes white.
Mix in a bowl the pieces of potatoes and carrots, white beans, chopped onion, chopped parsley, a peeled and cubed tomato, vinaigrette sauce.
Serve immediately.
